Weeknight Jambalaya Pasta


Time is critical especially when you have busy kiddos that need to go to various extracurriculars and you’re a single dad! This go-to favorite can be made ahead of time and is ready to go for a quick weeknight meal. It also works great for meal prep. Feel free to change it to make it your own! Enjoy!

Jambalaya Pasta

This a great and tasty recipe to make a weeknight meal.

Ingredients
  

  • 1 lbs Pasta Fettuccine
  • 1 lbs Chicken Breast cut into bite sized pieces
  • 1/2 lbs Shrimp deveined
  • 1/2 lbs Andouille Sausage (or your favorite sausage) sliced into half-inch-thick pieces
  • 2 tbsp cajun seasoning
  • 4 tbsp olive oil
  • 1 cup diced onion
  • 3 cloves minced garlic
  • 2 bay leaves
  • 1 medium Tomato Diced
  • 8 oz Tomato Sauce
  • 1/2 tbsp Red Pepper Flakes or Cayenne
  • 1 Red Bell Peper Diced
  • 1 Greed Bell Peper Diced
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 cup Chicken Broth
  • Salt and Peper To taste
  • Parsley For Garnish

Instructions
 

Prepare Pasta

  • Prepare pasta per package directions to al dente. Reserve pasta water and set it aside for later.
    1 lbs Pasta Fettuccine

Jambalaya Sauce

  • Cut chicken to bite size pieces. Season with 1 tbsp cajun seasoning and salt and pepper to taste. Add olive oil to the skillet and cook the chicken. Set chicken aside in a bowl with juices.
    1 lbs Chicken Breast
  • Prepare shrimp by removing shells and tails. Season with cajun seasoning. Cook in the same skillet for a few minutes until the shrimp is opaque. Once cooked, place shrimp and juices in a bowl and set aside.
    1/2 lbs Shrimp
  • Cut sausage into 1/2-inch round pieces. Cook the sausage in the same skillet for several minutes. Once cooked, place sausage and juices in a bowl and set aside.
    1/2 lbs Andouille Sausage (or your favorite sausage)
  • Add onions to the pan and cook until translucent. After several minutes, add bell papers to the pan to soften and cook down. Add minced garlic to the pan and cook for 30 seconds. Add diced tomato to the pan and cook for several minutes.
    1 cup diced onion, 3 cloves minced garlic, 1 Red Bell Peper Diced, 1 Greed Bell Peper Diced, 1 medium Tomato
  • Add the cooked chicken and sausage back to the pan with reserved juices from the meat. Add tomato sauce and chili flakes and the rest of the seasoning to the pan and simmer.
    2 tbsp cajun seasoning, 8 oz Tomato Sauce, 1/2 tbsp Red Pepper Flakes or Cayenne, 1 tsp Thyme, 1 tsp Oregano, 2 bay leaves
  • Add chicken broth and simmer until reduced. Add shrimp back to the pan for several minutes to heat up. Add reserved pasta to the pan and mix. Add salt and pepper to taste. Plate and add chopped parsley for garnish.
    1 cup Chicken Broth, Salt and Peper, Parsley
